Aubergine Katsu Curry


Gousto, it’s been a while. Yet again, you haven’t failed to deliver on your eye-opening test cooks! This week, I’ve given the Aubergine Katsu Curry a go and it’s been an all-round positive experience. I can honestly say it tastes as good as it looks!

An innovative, modern vegetarian take on the infamous katsu curry which we all know and love, and veggie-eaters can now enjoy the greatness of this flavoursome dish.

I was slightly sceptical at first as there is no seasoning on the aubergine, but the curry sauce is bursting with so many incredible flavours that work exceptionally well together, and this compliments the subtle taste of aubergine very well. The rice is also quite plain but, again, the side is perfectly paired with a creative, pickled ginger mixed leaf salad. So many bold flavours to open our scope of a traditional katsu! The fried onion garnish is also a little unexpected but exciting, and it does make all the difference. 

Gousto’s veggie katsu incorporates some unusual ingredients, like nigella seeds. To this day, I’m still not 100% sure what they are but they will honestly make you feel like a professional chef. Their power of transformation is just incredible; such a small addition yet the results are huge, making the dish as a whole completely different, masterful. I think what I love about a good ol’ Gousto recipe is the small ways in which they encourage you to become familiar with ingredients you’ve never thought of using. 

Quick, healthy and full of flavour – perfect for that one vegetarian friend whose coming over for dinner or when you’re on a bit of a detox!
